Chess Pie Bars


Ingredients

Crisco® Original No-Stick Cooking Spray
CRUST
2cups Martha White® All-Purpose Flour
1/4cup sugar
1/2teaspoon salt
3/4cup butter, cut into small pieces
FILLING
3 large eggs
1 1/2cups sugar
6tablespoons butter, melted
1tablespoon Martha White® Self-Rising White Corn Meal Mix
1teaspoon vanilla extract
1teaspoon white vinegar

 

Preparation Directions

1.HEAT oven to 350°F. Spray 13 x 9-inch baking pan with no-stick cooking spray. Combine all crust ingredients in large bowl. Beat on low speed of electric mixer until mixture resembles coarse crumbs.
2.PRESS mixture in bottom and about 1/2-inch up sides of prepared pan. Bake 20 minutes or until very light golden brown.
3.BEAT eggs in large bowl on low speed of electric mixer. Add sugar; beat until well blended. Stir in remaining ingredients; mix well.
4.POUR filling over hot crust; bake an additional 16 to 25 minutes or until filling is set. (Filling may puff up during baking, but will settle as it cools.) Cool 1 hour or until completely cooled. Cut into bars.
