Southern Orange Berry Scones


Ingredients

Crisco® Original No-Stick Cooking Spray
2 1/2cups Martha White® Self-Rising Flour
1/3cup sugar
1tablespoon grated fresh orange peel
1/2cup butter
1cup sweetened dried cranberries, cherries and/or strawberries
1 large egg
1/2cup buttermilk
1teaspoon water
1tablespoon sugar

 

Preparation Directions

1.HEAT oven to 400ºF. Spray large cookie sheet with no-stick cooking spray. Combine flour, sugar and orange peel in large bowl. Cut in butter with pastry blender or fork until mixture resembles coarse crumbs. Stir in cranberries.
2.PLACE egg in 1-cup measuring cup; beat well. Remove 1 tablespoon of beaten egg; set aside. Add remaining beaten egg and buttermilk to flour mixture; stir gently with fork until dry particles begin to cling together. (Do not add more liquid; mixture may be crumbly.)
3.PRESS dough together gently on lightly floured surface to form ball. Divide dough in half. Place both halves on prepared cookie sheet; press each into 7-inch round. Score each into 6 wedges with floured knife or pizza cutter.
4.STIR water into reserved 1 tablespoon egg. Brush top of dough with egg mixture; sprinkle with 1 tablespoon sugar.
5.BAKE 16 to 22 minutes or until light golden brown. Serve warm or cool.
