Southern Sweet Potato Bread


Ingredients

Crisco® Original No-Stick Cooking Spray
1 1/2cups Martha White® Self-Rising Flour
1cup sugar
1teaspoon ground nutmeg
1/2teaspoon ground cinnamon
1/2cup Crisco® Pure Vegetable Oil
2tablespoons milk
2 large eggs, slightly beaten
1cup mashed cooked sweet potatoes
1cup chopped pecans
1/2cup golden raisins

 

Preparation Directions

1.HEAT oven to 325ºF. Spray bottom only of 8 x 4-inch loaf pan with no-stick cooking spray. Combine flour, sugar, nutmeg and cinnamon in large bowl; mix well.
2.ADD oil, milk and eggs; blend well. Add sweet potatoes, pecans and raisins; mix well. Pour into prepared pan.
3.BAKE 1 1/4 to 1 1/2 hours or until toothpick inserted in center comes out clean. Cool in pan 15 minutes. Remove from pan; place on wire rack. Cool 1 hour or until completely cooled.
