Apricot Cream Cheese Shortcakes


Ingredients

SHORTCAKES
Easy Rich Biscuit Shortcakes
FILLING
6ounces dried apricots, cut into bite-sized pieces
2cups water
1/2cup sugar
2tablespoons butter
1/2teaspoon vanilla extract
TOPPING
6ounces cream cheese, softened
2tablespoons sugar
6tablespoons heavy cream

 

Preparation Directions

1.PREPARE and bake shortcakes as directed in recipe. Make filling as follows while shortcakes are cooling.
2.COMBINE apricots and water in medium saucepan. Bring to a boil. Reduce heat; cover and cook about 15 minutes or until apricots are tender. Stir in 1/2 cup sugar and butter. Simmer 30 to 40 minutes or until thickened, stirring frequently. Cool 30 minutes or until completely cooled. Stir in vanilla.
3.COMBINE all topping ingredients in small bowl; beat until smooth and creamy. Split shortcakes. Fill and top with apricot mixture and cream cheese topping. Store in refrigerator.
