Quick Loaf Breads
Although fruit and nut breads, such as banana, usually take about an hour to bake, they are in a category called “quick” breads because they use quick-acting baking powder and/or baking soda to make them rise and are baked immediately after mixing. Biscuits, cornbreads, muffins and pancakes seem to fit the “quick” name better because they bake quickly and are ready to eat as soon as they are done. The other bread category is yeast breads which use yeast for leavening and involve a longer process of mixing, kneading and rising before baking.
- Of all the quick loaves, banana and banana nut are the classics, but there are many other delicious flavors, too. Zucchini, pumpkin, sweet potato, lemon and cranberry are all flavorful choices.
- Quick loaves slice and taste better if made in advance. Cool, wrap and store in a cool place for several hours or overnight. They may also be frozen up to 3 months.
- Little sandwiches made with fruit and nut breads are classic brunch and luncheon fare. Spread slices with plain or flavored cream cheese or flavored butters and cut into finger sandwiches, small squares or triangles. For a special treat for the kids, spread slices of chocolate chip bread with peanut butter.
- Quick loaves make welcome gifts for new neighbors, a special thank you, or a thoughtful holiday gift. All you need to do is wrap tightly with plastic wrap and tie with a pretty ribbon.
- Although quick loaves are perfect for bake sales, gifts and parties, they are probably most often appreciated when readily available as a little snack. Keep on hand to serve with mid-morning coffee, for an after school treat or for weekend and holiday guests.
