The National Cornbread Festival

The 11th Annual National Cornbread Cook-Off

Set in the foothills of southern Tennessee, the finals of the National Cornbread Cook-Off, sponsored by Martha White® and Lodge Cast Iron®, took place in South Pittsburg, Tenn. on April 28, 2007. The challenge? Finding who could make the best main dish cornbread recipe in the United States prepared with at least one cup of Martha White Cornmeal or one package of Martha White Cornbread Mix – and cooked in Lodge cast iron cookware. The ten competitors served up quite a bit of competition as judges from across the country judged these delicious meals.

And the winners are...

Jenny Flake of Gilbert, AZ, won the first prize of $5,000 and a Five-Star Stainless Steel Range for her Chicken Taco Cornbread Wedges with Ranchero Cilantro Drizzle. A cornbread crust, accented crushed corn chips, was topped with a spicy chicken, tomato and green chile filling, sprinkled with cheese and baked in a cast iron skillet.

Caribbean Cornbread Crab Cakes earned Lanie Smith of Topeka, KS, second place. Smith added delicate flavor and texture to her crab cakes by using cooked, crumbled cornbread in the seafood mixture. Browned in a cast iron skillet and topped with a fresh mango salsa, this recipe was a big hit with the cook-off judges.

Third prize went to Judy Armstrong of Prairieville, LA, for her Roasted Red Pepper, Sage and Sausage Cornbread Dinner. A combination of Italian sausage, artichoke hearts, roasted red pepper and tomatoes were all baked up in a cornbread crust, and then sprinkled with cheese and sage.
