Coco Not Cookies

Ingredients

  • 1 cup sugar
  • 1/4 cup butter, softened
  • 1 teaspoon coconut extract
  • 1 large egg
  • 1 cup Hungry Jack® Instant Mashed Potato Flakes
  • 1 1/2 cups baking mix

Preparation Directions

  1. HEAT oven to 375°F. Combine sugar and butter in large bowl; beat until light and fluffy. Add coconut extract and egg; blend well.
  2. ADD potato flakes and biscuit mix; mix well. Shape dough into 3/4-inch balls. Place 2 inches apart on ungreased cookie sheet.
  3. BAKE 12 to 14 minutes or until golden brown. Remove from cookie sheet.
