Pecan Pie Squares

Ingredients

Crust:

Non-stick cooking spray

2 cups Martha White All-Purpose Flour

1/4 cup sugar

1/4 teaspoon salt

1/2 cup butter, melted

 

Filling:

3 large eggs, lightly beaten

1 cup sugar

1 cup light corn syrup

1/4 cup butter, melted

1 teaspoon vanilla extract

2 cups chopped pecans

Instructions

Heat oven to 350°F. Coat a 13 x 9-inch baking pan with non-stick cooking spray.

For Crust: Beat flour, sugar, salt, and butter in a medium bowl with a mixer on medium speed until well blended. Press evenly into the bottom of the prepared pan. Bake for 20 minutes or until light golden brown.

For Filling: Combine eggs, sugar, corn syrup, butter, vanilla, and pecans in a medium bowl. Pour over the partially baked crust. Bake for 25 to 28 minutes or until the filling is set. Cool completely. Cut into 2-inch squares.
