Apricot Muffins

Ingredients

Non-stick cooking spray

2 cups Martha White Self-Rising Flour

1/2 cup sugar

1/2 cup chopped dried apricots

2/3 cup milk

1/3 cup butter, melted and cooled

1/2 teaspoon vanilla extract

1 large egg, beaten

Instructions

Heat oven to 425°F. Spray 12 muffin cups with no-stick cooking spray. Combine flour and sugar in a medium bowl; mix well. Stir in apricots.

Combine milk, butter, vanilla, and egg in a medium bowl; blend well. Add to the flour mixture; stir just until dry ingredients are moistened (batter will be slightly lumpy). Fill prepared muffin cups 2/3 full.

Bake 15 to 18 minutes or until golden brown. Serve warm.
