Cornmeal Pancakes


No-stick cooking spray

1 egg

1 2/3 cups milk

2 tablespoons pure vegetable oil

1 1/2 cups Martha White Plain Enriched Yellow Corn Meal

1/2 cup Martha White All-Purpose Flour

1 tablespoon sugar

1 teaspoon baking soda

1 teaspoon salt


Coat griddle or large nonstick skillet with cooking spray. Wipe off excess with a paper towel. Heat the griddle to 350°F or a skillet over medium-high heat.

Whisk egg in a medium bowl. Stir in milk, oil, cornmeal, flour, sugar, baking soda, and salt until smooth.

Pour a scant 1/4 cup batter for each pancake onto a hot griddle. Cook for 1 to 1 1/2 minutes or until bubbles begin to break on the surface. Turn and cook for an additional 1 to 1 1/2 minutes or until golden brown.
